Mia’s Flavor File began as a way for me to collect the meals my husband and I love, so I could easily return to them whenever I needed inspiration or forgot what I did the first time. Let’s be honest, sometimes a meal comes out amazing, and then you can’t remember a single thing you added!

Now, I’m excited to share those recipes and ideas with you. Whether you are brand new to cooking and need beginner-friendly guidance, or you are an experienced cook looking for fresh inspiration, welcome to my page.

What you need

  • CHICKEN MARINADE
  • 1 lb boneless skinless chicken thighs, cut into bite-size pieces
  • 1 cup buttermilk
  • 2 tbsp hot sauce
  • 1 packet Goya Sazón with Culantro and Achiote
  • 1 tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp cayenne, optional
  • CRISPY COATING
  • 1 cup all-purpose flour
  • ½ cup cornstarch
  • 1 tsp Goya Adobo
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • 1 tsp chipotle chili powder
  • ½ tsp black pepper
  • Vegetable or canola oil, about ½ inch deep for frying
  • BAKED MAC & CHEESE
  • ½ lb dry elbow macaroni
  • 2 tbsp butter
  • 1 tsp each garlic powder, smoked paprika, and chipotle chili powder
  • ½ tsp chicken bouillon
  • 1 cup heavy cream
  • 1 cup shredded sharp cheddar
  • 1 cup shredded Colby Jack
  • ½ cup shredded cheddar, for topping
  • HONEY CHIPOTLE SAUCE
  • 1 tbsp butter
  • ½ cup Tabasco Chipotle Pepper Sauce
  • ⅓ cup honey
  • Optional garnish: parsley, green onions, or smoked paprika

Cooking timeline

    Marinate

    Mix the buttermilk, hot sauce, Sazón, garlic powder, onion powder, and optional cayenne. Add the chicken, cover, and refrigerate at least 30 minutes or up to 4 hours.

    Cook the pasta

    Heat the oven to 400°F. Boil the macaroni in salted water until 1 minute before al dente. Drain without rinsing.

    Make the cheese sauce

    Melt 2 tbsp butter over medium heat. Bloom the garlic powder, smoked paprika, chipotle powder, and bouillon for 30 seconds. Slowly add heavy cream and bring to a gentle simmer. Reduce heat and melt in 1 cup cheddar and the Colby Jack by handfuls. Fold in the macaroni and adjust salt or Adobo only after tasting.

    Bake the mac

    Transfer to a greased 8×8-inch dish, top with the remaining ½ cup cheddar, and bake 15–18 minutes until bubbly and lightly golden.

    Bread the chicken

    Mix all coating ingredients. Let excess marinade drip from each piece, press firmly into the flour mixture, and shake off excess. Rest the breaded chicken 5–10 minutes.

    Shallow-fry

    Heat ½ inch oil over medium-high for about 5 minutes. Fry 4–5 pieces at a time for 3–4 minutes per side, until deep golden and 165°F inside. Drain on paper towels and repeat.

    Make the glaze

    Melt 1 tbsp butter in a small saucepan. Whisk in chipotle hot sauce and honey over low heat for 2–3 minutes until glossy. Add another tablespoon honey if you want it sweeter.

    Gently toss the fried chicken in the warm sauce. Spoon baked mac and cheese onto each plate and top with the chicken and optional garnishes.
