Mia Oku, creator of Mia’s Flavor File

Mia’s Flavor File began as a way for me to collect the meals my husband and I love, so I could easily return to them whenever I needed inspiration or forgot what I did the first time. Let’s be honest, sometimes a meal comes out amazing, and then you can’t remember a single thing you added!

Now, I’m excited to share those recipes and ideas with you. Whether you are brand new to cooking and need beginner-friendly guidance, or you are an experienced cook looking for fresh inspiration, welcome to my page.

What you need

  • SPONGE
  • 1 cup all purpose flour
  • 1½ tsp baking powder
  • ¼ tsp salt
  • 4 large eggs, separated
  • ¾ cup granulated sugar, divided
  • ⅓ cup whole milk
  • 1 tsp vanilla
  • THREE MILK SOAK
  • ¾ cup sweetened condensed milk
  • ¾ cup evaporated milk
  • ½ cup heavy whipping cream
  • 1 tsp vanilla
  • WHIPPED TOPPING
  • 1 cup cold heavy whipping cream
  • 2 tbsp powdered sugar
  • ½ tsp vanilla
  • Cinnamon, for dusting

Cooking timeline

    Preheat

    Preheat the oven to 350°F and lightly grease an 8×8 baking pan.

    Mix Dry Ingredients

    Whisk together the flour, baking powder, and salt.

    Beat Yolks

    Beat the egg yolks with ½ cup sugar until pale and thick.

    Add Milk

    Mix the whole milk and vanilla into the yolk mixture, then gently mix in the dry ingredients until just combined.

    Beat Egg Whites

    In a clean bowl, beat the egg whites until soft peaks form. Gradually add the remaining ¼ cup sugar and continue beating until glossy firm peaks form.

    Fold

    Gently fold the egg whites into the batter in three additions, being careful not to deflate them.

    Bake

    Pour the batter into the prepared 8×8 pan and bake for 25–30 minutes, or until the cake is set and a toothpick comes out clean.

    Cool

    Let the cake cool for about 30 minutes.

    Poke holes all over the cooled cake so the milk mixture can soak in evenly.

    Make Soak

    Whisk together the sweetened condensed milk, evaporated milk, heavy whipping cream, and vanilla.

    Slowly pour the three milk mixture over the cake in stages, allowing each addition to absorb before adding more.

    Chill

    Cover and refrigerate for at least 4–6 hours. Overnight chilling gives the best texture and flavor.

    Whip Topping

    Beat the cold heavy whipping cream, powdered sugar, and vanilla until fluffy and able to hold soft to medium peaks.

    Finish

    Spread the whipped topping evenly over the chilled cake and lightly dust with cinnamon.

    Serve

    Keep chilled until ready to slice and serve.

Trust Me on This: Pour the milk soak slowly instead of all at once so the sponge absorbs it evenly without becoming a soggy mess.
