Mia Oku, creator of Mia’s Flavor File

Mia’s Flavor File began as a way for me to collect the meals my husband and I love, so I could easily return to them whenever I needed inspiration or forgot what I did the first time. Let’s be honest, sometimes a meal comes out amazing, and then you can’t remember a single thing you added!

Now, I’m excited to share those recipes and ideas with you. Whether you are brand new to cooking and need beginner-friendly guidance, or you are an experienced cook looking for fresh inspiration, welcome to my page.

What you need

  • 1 lb ground Italian sausage, sweet or hot
  • 3 cups dry penne, about 12 oz
  • 1 tbsp butter
  • 3–4 garlic cloves, minced, or 1 tbsp garlic paste
  • 1¼ cups heavy cream
  • ¾ cup grated Parmesan
  • ½ cup shredded mozzarella, optional
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp Italian seasoning
  • ¼ tsp paprika
  • ¼ tsp black pepper
  • ⅛–¼ tsp red pepper flakes, optional
  • Tiny pinch of Goya Adobo
  • ½–¾ cup reserved pasta water
  • Salt, for the pasta water

Cooking timeline

    Boil the water

    Fill a large pot with water and bring it to a boil. Add enough salt so the water tastes lightly salty.

    Cook the penne

    Add the penne and cook according to the package directions until just al dente. Before draining, reserve ¾ cup pasta water. Drain the pasta without rinsing.

    Brown the sausage

    While the pasta cooks, heat a large skillet over medium-high. Add the sausage, break it apart, and cook for 7–9 minutes until browned with no pink remaining. If needed, drain most of the grease while leaving about 1 tablespoon for flavor.

    Add butter + garlic

    Lower the heat to medium. Add the butter and garlic and stir for 30–45 seconds, just until fragrant. Do not let the garlic burn.

    Season

    Add the garlic powder, onion powder, Italian seasoning, paprika, black pepper, optional red pepper flakes, and a tiny pinch of Adobo. Stir for about 30 seconds.

    Make the cream sauce

    Lower the heat to medium-low. Pour in the heavy cream and scrape up the browned bits. Gently simmer for 3–4 minutes, stirring often. Do not let it boil aggressively.

    Add the cheese

    Lower the heat to low. Add the Parmesan a little at a time, stirring after each addition until smooth. Add the optional mozzarella and stir until melted.

    Toss with pasta

    Add the drained penne and toss until coated. Stir in ¼ cup pasta water for 1–2 minutes, then add more a few tablespoons at a time until the sauce is creamy and clings to the pasta.

    Taste + rest

    Taste before adding salt or Adobo because the sausage and Parmesan are already salty. Turn off the heat and rest for 2–3 minutes so the sauce thickens.

Trust Me on This: If the sauce gets too thick, stir in a splash of reserved pasta water or heavy cream over low heat. If it is too thin, cook uncovered over low for another 2–4 minutes, stirring frequently.
