Hi, I’m Mia Oku!

Mia Oku, creator of Mia’s Flavor File

Mia’s Flavor File began as a way for me to collect the meals my husband and I love, so I could easily return to them whenever I needed inspiration or forgot what I did the first time. Let’s be honest, sometimes a meal comes out amazing, and then you can’t remember a single thing you added!

Now, I’m excited to share those recipes and ideas with you. Whether you are brand new to cooking and need beginner-friendly guidance, or you are an experienced cook looking for fresh inspiration, welcome to my page.

What you need

  • 6 large eggs
  • 3–4 tbsp mayonnaise
  • ½ tsp mustard
  • 2 tbsp bacon bits
  • ½ tsp turmeric
  • ½ tsp oregano
  • ¼ tsp red pepper flakes, or less
  • ½ tsp salt and ¼ tsp black pepper
  • Sourdough bread, a bagel, or serve by itself

Cooking timeline

    Boil the eggs

    Place the eggs in a single layer, cover with cold water by 1 inch, and bring to a full boil. Turn off the heat immediately, cover, and let sit 11–12 minutes.

    Ice-water bath + peel

    Drain the eggs and immediately place them in a cold-water bath with ice. Cool for 5–10 minutes, then peel.

    Mix

    Chop the eggs and mix with mayonnaise and mustard. Add turmeric, oregano, red pepper flakes, salt, and black pepper.

    Finish

    Fold in the bacon bits last. Serve on sourdough, a bagel, or all by itself.

Trust Me on This: Start with 3 tablespoons mayo and add the fourth only if it needs it. Toasted sourdough gives the creamy filling the right bite.
