Hi, I’m Mia Oku!

Mia Oku, creator of Mia’s Flavor File

Mia’s Flavor File began as a way for me to collect the meals my husband and I love, so I could easily return to them whenever I needed inspiration or forgot what I did the first time. Let’s be honest, sometimes a meal comes out amazing, and then you can’t remember a single thing you added!

Now, I’m excited to share those recipes and ideas with you. Whether you are brand new to cooking and need beginner-friendly guidance, or you are an experienced cook looking for fresh inspiration, welcome to my page.

What you need

  • 1 cup Canilla extra long grain rice
  • 1¾ cups water
  • 2–3 tsp salted butter, plus extra for finishing
  • ½ tsp salt

Cooking timeline

    Rinse

    Rinse the rice 2–4 times, until the water runs clear, then drain. Do not soak it.

  2. 0:15
    Boil

    In a caldero, bring 1¾ cups water, ½ tsp salt, and 1 tsp salted butter to a rolling boil. The water should taste nicely salty, but not like the ocean.

    Add rice

    Slowly pour in the rice and stir once gently. Cover tightly and reduce the heat to very low.

    Cook exactly 16 minutes

    Cook covered on low heat for exactly 16 minutes. Do not lift the lid because the trapped steam is the key to fluffy, separate grains.

    Rest exactly 7 minutes

    Turn off the heat and leave the lid tightly closed for exactly 7 minutes. Do not lift the lid and do not add a towel.

  6. 0:40
    Butter + fluff

    Add 1–2 tsp salted butter on top. Gently fluff with a fork, lifting from the bottom to keep the grains separate. Taste and add a little more salt if needed.

Trust Me on This: Once the lid goes on, leave it alone: 16 minutes cooking, then 7 minutes resting. The steam does the work.
