Hi, I’m Mia Oku!

Mia’s Flavor File began as a way for me to collect the meals my husband and I love, so I could easily return to them whenever I needed inspiration or forgot what I did the first time. Let’s be honest, sometimes a meal comes out amazing, and then you can’t remember a single thing you added!
Now, I’m excited to share those recipes and ideas with you. Whether you are brand new to cooking and need beginner-friendly guidance, or you are an experienced cook looking for fresh inspiration, welcome to my page.

What you need
- INGREDIENTS
- RIBS
- About 1.7 lb pork ribs
- 1–2 tbsp chicken broth or water
- CAJUN MARINADE
- 2½ tbsp olive oil
- 1½ tsp regular soy sauce
- 1½ tbsp minced garlic
- ¾ tsp Adobo
- ½ tsp Goya Perfect Seasoning
- ¾ tsp Slap Ya Mama Seasoning
- 2½ tsp paprika or smoked paprika
- 1½ tsp garlic powder
- 1½ tsp onion powder
- ¾ tsp ground cumin
- ¼ tsp ground turmeric
- ½ tsp cayenne pepper (use ¼ tsp for milder ribs)
- 12–15 cracks freshly ground black pepper
Cooking timeline
- 0:00Mix
Add all of the Cajun marinade ingredients to a small bowl and mix until a loose, spreadable paste forms.
- 0:05Coat
Rub the marinade generously over both sides and all the edges of the ribs.
- 0:10Marinate
Cover and refrigerate for 4 hours. The ribs can marinate for up to 6 hours, but 4 hours is plenty.
- 4:10Preheat
Preheat the oven to 315°F.
- 4:15Wrap
Place the ribs on a large sheet of foil. Pour 1–2 tablespoons of chicken broth or water around the ribs without pouring it over the seasoning. Wrap the ribs very tightly so the steam cannot escape.
- 4:20Bake
Bake for 2¼–2½ hours.
- 6:35Check
Check the ribs after 2¼ hours. The meat should be pulling back from the bones, and a fork should slide easily into the meat. If they are not very tender, rewrap them and bake for another 15–30 minutes.
- 6:50Broil
Carefully unwrap the ribs and spoon a little of the juices from the foil over the meat. Broil on HIGH for 3–5 minutes until the top is browned and slightly caramelized.
- 6:55Rest
Let the ribs rest for 10 minutes before serving.
Trust Me on This: Skip the extra salt before broiling. The soy sauce, Adobo, Perfect Seasoning, and Slap Ya Mama already give the ribs plenty of flavor.
