Mia Oku, creator of Mia’s Flavor File

Mia’s Flavor File began as a way for me to collect the meals my husband and I love, so I could easily return to them whenever I needed inspiration or forgot what I did the first time. Let’s be honest, sometimes a meal comes out amazing, and then you can’t remember a single thing you added!

Now, I’m excited to share those recipes and ideas with you. Whether you are brand new to cooking and need beginner-friendly guidance, or you are an experienced cook looking for fresh inspiration, welcome to my page.

What you need

  • 2 cans cooked chicken breast, drained
  • ½ cup mayonnaise
  • 1 celery stalk, finely diced
  • ½ tsp onion powder
  • ½ tsp paprika
  • ⅛ tsp cumin
  • ¼ tsp garlic powder
  • ¼ tsp dried thyme
  • ¼ tsp black pepper
  • ½ tsp salt
  • 1 tsp Dijon mustard
  • Sourdough bread, a bagel, or serve by itself

Cooking timeline

    Drain + shred

    Drain both cans of chicken breast very well. Add the chicken to a medium bowl and shred it finely with a fork.

    Make the dressing

    In a small bowl, combine the mayonnaise, Dijon mustard, onion powder, paprika, cumin, garlic powder, thyme, black pepper, and salt.

    Combine

    Add the celery to the shredded chicken. Pour the dressing over it and mix until evenly coated.

    Chill

    Cover and refrigerate for 30 minutes before serving for the best flavor.

Trust Me on This: The cumin is meant to stay in the background. Use just ⅛ teaspoon, then serve the chilled chicken salad on toasted sourdough, a bagel, or all by itself.
