Mia Oku, creator of Mia’s Flavor File

Mia’s Flavor File began as a way for me to collect the meals my husband and I love, so I could easily return to them whenever I needed inspiration or forgot what I did the first time. Let’s be honest, sometimes a meal comes out amazing, and then you can’t remember a single thing you added!

Now, I’m excited to share those recipes and ideas with you. Whether you are brand new to cooking and need beginner-friendly guidance, or you are an experienced cook looking for fresh inspiration, welcome to my page.

What you need

  • ½ cup Bisquick
  • ⅓ cup milk, or ¼ cup plus a small splash
  • 1 egg
  • 1 tbsp sugar, optional but recommended
  • 1 splash vanilla, optional
  • Butter, for the pan and serving
  • Syrup, for serving
  • Optional: powdered sugar

Cooking timeline

    Mix the batter

    Add the Bisquick, milk, egg, optional sugar, and optional vanilla to a bowl. Stir gently just until combined. Lumps are fine; do not overmix.

    Rest

    Let the batter rest for 5 minutes. This helps the pancake get fluffy.

    Heat the pan

    Heat a pan over medium-low and add a little butter.

    Pour the first pancake

    Pour half of the batter into the center of the small pan. Do not let it spread all the way to the edges.

    Cook the first side

    Cook for 3–4 minutes, until bubbles form and the edges look set.

    Flip

    Flip carefully with a wide spatula. Use the plate method if the pancake is too large to flip comfortably.

    Cook the second side

    Cook for 2–3 minutes. Lower the heat slightly if it is browning too quickly.

    Optional covered finish

    Cover the pan for 30–60 seconds after flipping if the center needs help cooking through.

    Check + repeat

    The first pancake is done when both sides are golden brown, it feels slightly firm, and there is no wet batter inside. Add a little more butter to the pan and repeat the same steps with the remaining batter for the second pancake.

    Finish

    Serve both pancakes with butter, syrup, and optional powdered sugar.

Trust Me on This: The 5-minute batter rest matters. Keep the heat at medium-low so the middle cooks before the outside gets too dark.
