Hi, I’m Mia Oku!

Mia’s Flavor File began as a way for me to collect the meals my husband and I love, so I could easily return to them whenever I needed inspiration or forgot what I did the first time. Let’s be honest, sometimes a meal comes out amazing, and then you can’t remember a single thing you added!
Now, I’m excited to share those recipes and ideas with you. Whether you are brand new to cooking and need beginner-friendly guidance, or you are an experienced cook looking for fresh inspiration, welcome to my page.

What you need
- Beef: 1 lb beef chuck, cut into large chunks
- Beef seasoning: ½ tsp each salt, black pepper, onion powder, and paprika
- ½ tsp garlic powder, optional if using fresh garlic in the sauce
- ½ beef bouillon cube or ½ tsp beef bouillon powder
- 2–2½ cups water, enough to cover the beef
- Soup base: ½ cup natural peanut butter
- ½ can chopped or crushed tomatoes (about ¾ cup)
- 1 tbsp tomato paste, if using
- ½ large onion, blended into liquid
- 1–2 garlic cloves, minced
- 1½ tsp freshly grated ginger
- ⅛ tsp cayenne pepper, or one pinch
- 1 tbsp vegetable or peanut oil
- ¾–1 cup reserved beef broth for the peanut mixture
- ½–1 cup additional beef cooking liquid for finishing
- ½ tsp bouillon powder and ½ tsp salt for the soup base
Cooking timeline
- 0:00Start the beef
Place the beef, beef seasonings, bouillon, and water in a separate pot. Bring to a boil.
- 0:10Simmer until tender
Reduce heat to medium-low, cover completely, and simmer 60–90 minutes until fork-tender. Keep every drop of the cooking liquid for broth.
- 1:10Cook the aromatics
In an extra-large pot, heat the oil on low. Add the blended onion, garlic, and cayenne. Cook 8–10 minutes, stirring.
- 1:20Build the tomato base
Add tomatoes, optional tomato paste, ginger, and salt. Cook on low for 10–15 minutes until thick and darker in color.
- 1:35Mix in the peanut butter
In a bowl, whisk the peanut butter with ¾–1 cup warm reserved beef broth until smooth. Slowly stir it into the tomato base.
- 1:40Simmer low
Keep the heat low with the lid half-on. Stir gently every 10–15 minutes. Do not let the peanut mixture bubble hard.
- 1:55Combine + finish
Add the tender beef. Slowly stir in ½–1 cup beef cooking liquid. Simmer 15–20 minutes on low with the lid half-on, then adjust salt, cayenne, or thickness.
Trust Me on This: Keep the heat low because peanut butter burns quickly. If the soup is too thick, add hot broth 1–2 tbsp at a time. It is ready when the beef pulls apart and the sauce coats a spoon and drips slowly.
