Mia Oku, creator of Mia’s Flavor File

Mia’s Flavor File began as a way for me to collect the meals my husband and I love, so I could easily return to them whenever I needed inspiration or forgot what I did the first time. Let’s be honest, sometimes a meal comes out amazing, and then you can’t remember a single thing you added!

Now, I’m excited to share those recipes and ideas with you. Whether you are brand new to cooking and need beginner-friendly guidance, or you are an experienced cook looking for fresh inspiration, welcome to my page.

What you need

  • ½ cup gluten free oat flour
  • 1 egg
  • 3 tbsp plain Greek yogurt
  • ¼ cup water
  • 1 tsp gluten free baking powder
  • 2 tsp maple syrup or honey
  • ½ tsp cinnamon
  • Tiny pinch of salt
  • 1 tsp neutral oil
  • Cooking spray

Cooking timeline

    Make the Batter

    Whisk together the egg, Greek yogurt, water, maple syrup or honey, and 1 tsp neutral oil.

    Add the Dry Ingredients

    Add the oat flour, baking powder, cinnamon, and salt. Stir just until combined. Do not overmix.

    Rest the Batter

    Let the batter rest for 5 minutes. It should be thick and creamy but slowly pourable. If it becomes too thick, stir in 1 tbsp water.

    Heat the Pan

    Heat a pan over medium heat for 1 to 2 minutes. Lightly coat with cooking spray.

    Portion the Pancakes

    Divide the batter into 3 small pancakes. Keep them small enough that the centers can cook through properly.

    Cook the First Side

    Once the batter is in the pan, reduce the heat to medium low. Cook uncovered for about 2½ to 3½ minutes, until several bubbles appear, the edges are set, and the bottoms are golden.

    Flip and Cover

    Flip the pancakes, cover the pan, and cook for about 1½ minutes, or until the centers are fully cooked. Do not press the pancakes down with your spatula.

    Finish

    Lightly spray the pan again as needed and repeat with any remaining batter.

Trust Me on This: Keep the pancakes small. The Greek yogurt keeps them soft and fluffy, but larger pancakes can brown before the centers cook through.
