Hi, I’m Mia Oku!

Mia Oku, creator of Mia’s Flavor File

Mia’s Flavor File began as a way for me to collect the meals my husband and I love, so I could easily return to them whenever I needed inspiration or forgot what I did the first time. Let’s be honest, sometimes a meal comes out amazing, and then you can’t remember a single thing you added!

Now, I’m excited to share those recipes and ideas with you. Whether you are brand new to cooking and need beginner-friendly guidance, or you are an experienced cook looking for fresh inspiration, welcome to my page.

What you need

  • 4 thin-sliced chicken cutlets
  • 2 tbsp avocado oil, plus a drizzle for the pan
  • 1 tsp Goya Adobo
  • 1 packet Goya Sazón
  • 1½ tsp Goya Perfect Seasoning
  • 1 tsp paprika
  • ½ tsp black pepper
  • 1 tsp Italian seasoning
  • 1 bag (9 oz) romaine lettuce
  • 6 large eggs
  • 1½ cups shredded Gouda
  • Ranch dressing, about 2–3 tbsp per serving
  • Optional: fresh black pepper

Cooking timeline

    Marinate the chicken

    Mix 2 tbsp avocado oil with the Adobo, Sazón, Perfect Seasoning, paprika, black pepper, and Italian seasoning. Coat all 4 cutlets, cover, and refrigerate until ready to cook.

    Boil the eggs

    Cover the eggs with cold water by 1 inch and bring to a rolling boil. Turn off the heat, cover, and let sit 12 minutes. Cool in ice water for 5–10 minutes, then peel.

    Cook the chicken

    Heat a lightly oiled skillet over medium-high. Cook the cutlets 3–5 minutes per side, until they reach 165°F. Rest 5 minutes, then slice.

    Assemble

    Divide the romaine between bowls. Top each with sliced chicken, 2 sliced eggs, Gouda, ranch, and optional fresh black pepper. Save the extra 2 eggs if you do not need them.

Trust Me on This: Rest the chicken before slicing so the seasoning stays on the cutlets and the juices stay inside.
