Mia Oku, creator of Mia’s Flavor File

Mia’s Flavor File began as a way for me to collect the meals my husband and I love, so I could easily return to them whenever I needed inspiration or forgot what I did the first time. Let’s be honest, sometimes a meal comes out amazing, and then you can’t remember a single thing you added!

Now, I’m excited to share those recipes and ideas with you. Whether you are brand new to cooking and need beginner-friendly guidance, or you are an experienced cook looking for fresh inspiration, welcome to my page.

What you need

  • 1.4 lb thin chicken cutlets, about 5 pieces
  • MARINADE FOR 2 HOURS
  • ¼ cup milk
  • 1 tbsp mayonnaise
  • 1 tbsp avocado oil
  • 1½ tsp Goya Adobo
  • 1 packet Goya Sazón
  • 1½ tsp Goya Perfect Seasoning
  • 1½ tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp paprika
  • ¼ tsp turmeric
  • ½ tsp black pepper
  • ¾ tsp chicken bouillon powder
  • FLOUR BOWL
  • ½ cup all-purpose flour
  • 1 tbsp cornstarch
  • Pinch each Adobo and garlic powder
  • EGG WASH: 2 large eggs, beaten
  • PANKO BOWL
  • 2 cups Japanese panko
  • 2 tbsp grated Parmesan
  • ½ tsp garlic powder
  • ¼ tsp paprika
  • ¼ tsp black pepper
  • Avocado oil, ¼ inch deep for frying

Cooking timeline

    Marinate

    Mix all marinade ingredients. Coat the chicken and refrigerate for 2 hours.

    Set up 3 bowls

    Mix flour, cornstarch, Adobo, and garlic powder in bowl 1. Beat the eggs in bowl 2. Mix Japanese panko, Parmesan, garlic powder, paprika, and black pepper in bowl 3.

    Bread

    Let excess marinade drip off each cutlet. Coat lightly in flour, dip in egg, then press firmly into the seasoned panko. Rest on a tray for 10–15 minutes.

    Heat the oil

    Pour ¼ inch avocado oil into a large skillet and heat over medium. A few panko crumbs should sizzle immediately.

    Fry

    Fry 2–3 cutlets at a time for 3–4 minutes on the first side without moving them. Flip and cook another 3–4 minutes, until deep golden and 165°F inside.

    Rest

    Transfer to a paper-towel-lined plate and rest for 3–5 minutes before serving.

Trust Me on This: Do not crowd the pan or press the cutlets down. If the panko browns too quickly, lower the heat before the chicken gets dark.
