Behind Flavor File

Hi, I’m Mia Oku!

Mia Oku, creator of Mia’s Flavor File

Mia’s Flavor File began as a way for me to collect the meals my husband and I love, so I could easily return to them whenever I needed inspiration or forgot what I did the first time. Let’s be honest, sometimes a meal comes out amazing, and then you can’t remember a single thing you added!

Now, I’m excited to share those recipes and ideas with you. Whether you are brand new to cooking and need beginner-friendly guidance, or you are an experienced cook looking for fresh inspiration, welcome to my page.

Mia’s Flavor File will continue to grow as my husband and I try new meals, discover new flavors, and create memories in our home. Have an idea, a suggestion, or simply want to chat? Feel free to send me a message.

I’m so excited for the food journey we’ll be taking together. And remember, the secret ingredients are always love and Adobo 😉

Cooking timeline

  1. 0:00
    Defrost the Shrimp

Place the frozen shrimp in a bowl of cold water for about 15 minutes, or until fully thawed. Drain well and pat extremely dry.

  2. 0:15
    Season the Shrimp

Season the shrimp with Adobo, garlic powder, onion powder, black pepper, and ground ginger.

  3. 0:16
    Reheat the Broccoli

If using leftover Soy Maple Sesame Broccoli, air fry at 350°F for 2 to 3 minutes. Remove and keep warm.

  4. 0:17
    Cook the Shrimp

Heat olive oil in a large skillet over medium high heat. Add the shrimp in a single layer and cook for 1½ to 2 minutes.

  5. 0:19
    Flip the Shrimp

Flip and cook for another 1½ to 2 minutes. Add the minced garlic during the final 30 seconds. Toss, then remove the shrimp as soon as they are cooked through.

  6. 0:21
    Scramble the Eggs

Lower the heat to medium. Add a little olive oil if needed. Crack the eggs into the skillet, season with salt and black pepper, and scramble until just set. Remove and set aside.

  7. 0:23
    Fry the Cauliflower Rice

Increase the heat to medium high. Add the cold leftover corn cauliflower rice to the same skillet. Spread it across the pan and leave it undisturbed for about 2 minutes so it can develop browned bits.

  8. 0:25
    Season the Fried Rice

Add minced garlic, ground ginger, and 2 tsp low sodium soy sauce. Toss and fry for another 3 to 4 minutes.

  9. 0:26
    Reheat the Sausage

If using leftover sausage, add it to a separate small skillet over medium low heat with 1 tsp water. Cover for 1 to 2 minutes, then uncover and toss until hot.

  10. 0:28
    Make the Gochujang Spicy Mayo

Mix the light mayonnaise and gochujang until smooth. Add a small splash of water until thin enough to drizzle.

  11. 0:29
    Taste and Adjust

Taste the cauliflower rice before adding more seasoning. Add a little more soy sauce if it needs more savory flavor or Adobo if it needs more overall seasoning.

  12. 0:30
    Bring It Together

Return the scrambled eggs and shrimp to the cauliflower rice. Toss everything together for about 1 minute, just until everything is hot.

  13. 0:31
    Finish the Fried Rice

Turn off the heat and stir in the sesame oil.

  14. 0:32
    Serve

Divide the Shrimp Fried Cauliflower Rice between two bowls. Add the reheated broccoli and sausage if using, then drizzle the Gochujang Spicy Mayo over the top.

Trust Me on This: Use the cauliflower rice cold from the fridge so it can actually fry and develop browned bits. Taste before adding extra Adobo or soy sauce since the leftovers are already seasoned.
