Hi, I’m Mia Oku!

Mia’s Flavor File began as a way for me to collect the meals my husband and I love, so I could easily return to them whenever I needed inspiration or forgot what I did the first time. Let’s be honest, sometimes a meal comes out amazing, and then you can’t remember a single thing you added!
Now, I’m excited to share those recipes and ideas with you. Whether you are brand new to cooking and need beginner-friendly guidance, or you are an experienced cook looking for fresh inspiration, welcome to my page.

What you need
- ½ cup tomato paste
- ⅓ cup water
- 1½ tbsp apple cider vinegar or white vinegar
- 1½ tbsp honey or maple syrup
- 1 tsp garlic paste
- 1 tsp paprika, preferably smoked
- ½ tsp onion powder
- ¼ tsp black pepper
- ¼ tsp Goya Adobo
- Optional: 1–2 tbsp additional water, if needed
Cooking timeline

Add the tomato paste, water, vinegar, honey or maple syrup, garlic paste, paprika, onion powder, black pepper, and Adobo to a small saucepan. Whisk until smooth.
- 0:03Simmer gently
Bring to a gentle simmer over medium-low heat. Cook uncovered for 8–10 minutes, stirring frequently so the tomato paste does not burn.
- 0:08Adjust the thickness
If the sauce becomes too thick, stir in another 1–2 tablespoons water, a little at a time.
- 0:11Taste + balance
If it is too tangy, add ½ teaspoon honey. If it is too sweet, add a tiny splash of vinegar. If it needs more flavor, add a small pinch of Adobo or smoked paprika.
- 0:13Cool
Let the sauce cool for a few minutes. It will thicken more as it sits.
Trust Me on This: Brush it onto meat only during the last few minutes of cooking so the honey does not burn.
