Hi, I’m Mia Oku!

Mia’s Flavor File began as a way for me to collect the meals my husband and I love, so I could easily return to them whenever I needed inspiration or forgot what I did the first time. Let’s be honest, sometimes a meal comes out amazing, and then you can’t remember a single thing you added!
Now, I’m excited to share those recipes and ideas with you. Whether you are brand new to cooking and need beginner-friendly guidance, or you are an experienced cook looking for fresh inspiration, welcome to my page.

What you need
- 1 bell pepper, sliced
- ½ medium onion, sliced
- 1 bag frozen spinach
- 1–2 tsp olive oil or avocado oil
- ½ tsp Goya Perfect Seasoning
- ¼ tsp garlic powder
- ¼ tsp onion powder
- ¼ tsp paprika
- Small pinch of Adobo seasoning
- Freshly cracked black pepper, to taste
- Pinch of red pepper flakes (optional)
- 1–2 tsp lime juice
- 1 tbsp grated Parmesan cheese (optional)
Cooking timeline
- 0:00Heat
Heat the olive or avocado oil in a large skillet over medium heat.
- 0:02Sauté
Add the sliced onion and bell pepper. Cook for 7–10 minutes, stirring occasionally, until they begin to soften.
- 0:10Steam
If the peppers and onions are still firm, add 1 tablespoon of water. Cover the skillet and cook for 2–3 minutes to help them soften.
- 0:13Add
Add the frozen spinach directly to the skillet. Cover and cook for 3–4 minutes, or until the spinach begins to thaw.
- 0:17Break Apart
Remove the lid and break the spinach apart with a wooden spoon or spatula. Stir it together with the peppers and onions.
- 0:18Reduce
Cook uncovered for another 4–6 minutes, stirring occasionally, until most of the excess water from the spinach has evaporated.

Add the Goya Perfect Seasoning, garlic powder, onion powder, paprika, Adobo, black pepper, and red pepper flakes, if using.
- 0:25Cook
Stir well and cook for another 2–3 minutes so the vegetables absorb the seasoning.
- 0:28Finish
Remove the skillet from the heat and stir in 1 teaspoon of lime juice. Taste and add the remaining teaspoon if desired.
- 0:30Serve
Taste and adjust the seasoning if needed. Sprinkle with grated Parmesan before serving, if desired.
Trust Me on This: Let most of the liquid from the frozen spinach evaporate before adding the seasonings. This keeps the vegetables flavorful instead of watery.
