Hi, I’m Mia Oku!

Mia Oku, creator of Mia’s Flavor File

Mia’s Flavor File began as a way for me to collect the meals my husband and I love, so I could easily return to them whenever I needed inspiration or forgot what I did the first time. Let’s be honest, sometimes a meal comes out amazing, and then you can’t remember a single thing you added!

Now, I’m excited to share those recipes and ideas with you. Whether you are brand new to cooking and need beginner-friendly guidance, or you are an experienced cook looking for fresh inspiration, welcome to my page.

What you need

  • 1½ lb baby Yukon Gold potatoes
  • 1–2 tbsp olive oil
  • 2 tbsp melted butter
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp garlic powder
  • ¼ cup grated Parmesan
  • Optional: 1 tbsp chopped parsley
  • Optional: a light sprinkle of Goya Adobo

Cooking timeline

  1. 0:00
    Boil

    Boil the potatoes in generously salted water for 15–20 minutes, until easily pierced with a fork.

  2. 0:20
    Steam-dry

    Drain the potatoes and let them steam-dry for 5 minutes. Preheat the air fryer to 400°F.

  3. 0:25
    Smash

    Gently smash each potato with the bottom of a glass, keeping them about ½-inch thick so they hold together.

  4. 0:28
    Oil + season

    Brush or drizzle both sides generously with olive oil. Season with salt, black pepper, garlic powder, and optional Adobo.

  5. 0:30
    Air fry

    Arrange in a single layer and air fry at 400°F for 15–20 minutes, until deeply golden and crispy. Work in about 2 batches and optionally flip after 10 minutes for extra crispiness.

    Butter + finish

    Brush with melted butter during the last 2–3 minutes. Immediately sprinkle with Parmesan and optional parsley.

Trust Me on This: Give the potatoes space. Crowding turns crispy smashed potatoes into steamed and emotionally disappointed potatoes.
