Mia Oku, creator of Mia’s Flavor File

Mia’s Flavor File began as a way for me to collect the meals my husband and I love, so I could easily return to them whenever I needed inspiration or forgot what I did the first time. Let’s be honest, sometimes a meal comes out amazing, and then you can’t remember a single thing you added!

Now, I’m excited to share those recipes and ideas with you. Whether you are brand new to cooking and need beginner-friendly guidance, or you are an experienced cook looking for fresh inspiration, welcome to my page.

What you need

  • CROSTINI
  • 5 slices Ezekiel bread, crusts removed and cut in half diagonally
  • 1 tbsp olive oil
  • GARLIC HERB GREEK YOGURT SPREAD
  • ½ cup plain Greek yogurt
  • 1 tsp minced garlic
  • 1 tbsp grated Parmesan, or more to taste
  • ½ tsp Italian seasoning
  • Freshly cracked black pepper, to taste
  • TOPPING
  • 4–6 thin slices prosciutto
  • ½ cup jarred roasted red peppers, drained, patted dry, and thinly sliced
  • 1 tsp olive oil
  • 1 tsp minced garlic
  • Pinch of black pepper
  • FINISH
  • Balsamic glaze
  • Fresh basil or parsley, chopped (optional)

Cooking timeline

    Prep

    Remove the crusts from the Ezekiel bread and cut each slice in half. Lightly brush both sides with olive oil.

    Air Fry

    Air fry the bread at 375°F for 3–5 minutes, flipping halfway, until crisp and golden.

    Mix

    Combine the Greek yogurt, minced garlic, Parmesan, Italian seasoning, and black pepper in a small bowl. Mix until smooth. Taste and add more Parmesan if desired.

    Warm

    Heat 1 teaspoon olive oil in a small skillet over medium heat. Add the minced garlic and cook for about 30 seconds. Add the roasted red peppers and a pinch of black pepper. Cook for 2–3 minutes until warm and fragrant.

    Assemble

    Spread a thin layer of the garlic herb Greek yogurt onto each crostini. Top with half a slice of gently folded prosciutto and a small spoonful of warm roasted red peppers.

    Finish

    Drizzle lightly with balsamic glaze. Finish with chopped basil or parsley and freshly cracked black pepper, if desired.

Trust Me on This: The balsamic glaze is a must. It perfectly balances the salty prosciutto, creamy yogurt, and sweet roasted peppers.
