Hi, I’m Mia Oku!

Mia Oku, creator of Mia’s Flavor File

Mia’s Flavor File began as a way for me to collect the meals my husband and I love, so I could easily return to them whenever I needed inspiration or forgot what I did the first time. Let’s be honest, sometimes a meal comes out amazing, and then you can’t remember a single thing you added!

Now, I’m excited to share those recipes and ideas with you. Whether you are brand new to cooking and need beginner-friendly guidance, or you are an experienced cook looking for fresh inspiration, welcome to my page.

What you need

  • 1 tbsp oil
  • 2 heaping tbsp sofrito
  • 8 oz tomato sauce
  • 2 cans, 15 to 16 oz each, kidney, red, or pink beans, drained and rinsed
  • 1½ cups water
  • 1 packet Sazón with Coriander and Annatto, Culantro y Achiote
  • 1 packet Goya Jamón ham flavored seasoning
  • 1 tsp Adobo
  • ½ tsp garlic powder
  • ¼ tsp dried oregano
  • ¼ tsp ground black pepper
  • 4 to 5 green olives, whole, for flavor.
  • ½ lb potatoes, peeled and diced into large chunks

Cooking timeline

    Sauté the Sofrito

    In a medium caldero, heat the oil over medium heat. Add the sofrito and sauté for 2 to 3 minutes.

    Build the Broth

    Add the tomato sauce, beans, water, sazón, ham flavored seasoning, and green olives. Add the black pepper, Adobo, garlic powder, and oregano, then stir well.

    Taste and Adjust

    Taste and adjust the spices to your liking. The broth should be slightly salty because the potatoes will absorb much of the flavor.

    Add the Potatoes

    Add the peeled potato chunks and bring everything to a boil.

    Simmer

    Reduce the heat to low and simmer for about 30 minutes, or until the potatoes are cooked through. The exact time will depend on the size of the potato chunks.

Trust Me on This: Make the broth a little saltier than the final flavor you want. Those potatoes are about to drink up the seasoning.
