Hi, I’m Mia Oku!

Mia’s Flavor File began as a way for me to collect the meals my husband and I love, so I could easily return to them whenever I needed inspiration or forgot what I did the first time. Let’s be honest, sometimes a meal comes out amazing, and then you can’t remember a single thing you added!
Now, I’m excited to share those recipes and ideas with you. Whether you are brand new to cooking and need beginner-friendly guidance, or you are an experienced cook looking for fresh inspiration, welcome to my page.

What you need
- 1 large Spanish onion
- 1 large green bell pepper
- 2 Cubanelle peppers
- 15 ají dulce peppers
- 10 to 12 garlic cloves
- 1 bunch fresh cilantro
- 8 to 10 recao leaves
Cooking timeline
- 0:00Wash
Wash the green bell pepper, Cubanelle peppers, ají dulce, cilantro, and recao thoroughly. Pat everything dry.
- 0:05Prep the Onion
Peel the Spanish onion and cut it into large chunks.
- 0:07Prep the Bell Pepper
Remove the stem, seeds, and white membrane from the green bell pepper. Cut into large chunks.
- 0:09Prep the Cubanelles
Remove the stems and seeds from both Cubanelle peppers and roughly chop.
- 0:11Prep the Ají Dulce
Remove the stems from all 15 ají dulce peppers. Split them open and remove most of the seeds.
- 0:14Prep the Garlic
Peel 10 to 12 garlic cloves.
- 0:16Prep the Cilantro
Use the cilantro leaves and tender green stems. Trim away the dry or thick ends at the bottom.
- 0:18Prep the Recao
Use 8 to 10 recao leaves and roughly tear them into smaller pieces.
- 0:20Divide
Divide all of the ingredients into about 3 smaller batches so the blender is not overloaded.
- 0:21Blend
Add some onion and peppers to the blender first and pulse until they begin releasing liquid. Add the garlic, cilantro, and recao and continue pulsing until finely blended, thick, and spoonable.
- 0:25Adjust If Needed
Avoid adding water unless the blender needs help. If necessary, add only 1 tbsp water at a time.
- 0:27Combine
Pour all of the blended batches into one large bowl and stir thoroughly so everything is evenly distributed.
- 0:29Freeze
Spoon the sofrito into covered ice cube trays or an airtight freezer container. Freeze until completely solid. If using ice cube trays, transfer the frozen cubes to a freezer bag or container for easy portions.
Trust Me on This: Store it in an airtight container in the freezer, or even better, freeze it in covered ice cube trays for easy portions. Once solid, transfer the cubes to a freezer bag or container so you can grab exactly what you need.
