Mia Oku, creator of Mia’s Flavor File

Mia’s Flavor File began as a way for me to collect the meals my husband and I love, so I could easily return to them whenever I needed inspiration or forgot what I did the first time. Let’s be honest, sometimes a meal comes out amazing, and then you can’t remember a single thing you added!

Now, I’m excited to share those recipes and ideas with you. Whether you are brand new to cooking and need beginner-friendly guidance, or you are an experienced cook looking for fresh inspiration, welcome to my page.

What you need

  • 1 lb ground beef
  • ¾ of a 1 lb box linguine
  • About 2 cups Alfredo sauce
  • 1 to 2 tbsp butter
  • 1 tbsp olive oil
  • 1 to 2 tsp roasted garlic, rosemary, and sea salt seasoning blend
  • OR
  • ¾ tsp garlic powder
  • ½ tsp dried rosemary, crushed
  • ¼ tsp sea salt
  • 1 to 2 tsp freshly cracked black pepper, divided
  • 2 to 3 garlic cloves, minced, optional
  • ¼ to ½ tsp red pepper flakes, optional
  • ½ cup grated Parmesan
  • ½ to 1 cup reserved pasta water
  • Small squeeze fresh lemon juice, optional

Cooking timeline

    Boil the Water

    Bring a large pot of generously salted water to a full boil.

    Cook the Linguine

    Add the linguine and stir immediately to separate the noodles. Cook for 1 minute less than the package directions so the pasta stays al dente.

    Brown the Beef

    While the pasta cooks, heat a large skillet over medium high heat. Add the olive oil and ground beef. Season with about half of the roasted garlic, rosemary, and sea salt blend and ½ to 1 tsp black pepper. If using the homemade seasoning option, use about half of that mixture here.

    Build a Crust

    Let the beef cook undisturbed for 2 to 3 minutes so it develops a deep brown crust. Break it apart and continue cooking until fully browned. Drain excess grease if needed, leaving a little in the skillet for flavor.

    Build the Flavor

    Lower the heat to medium. Add 1 tbsp butter, the fresh garlic if using, and the red pepper flakes. Cook for 30 to 60 seconds until fragrant. Add the remaining seasoning blend or homemade seasoning mixture.

    Reserve Pasta Water

    Before draining the linguine, reserve 1 cup of pasta water. Drain the pasta without rinsing.

    Add the Alfredo

    Pour the Alfredo sauce into the skillet with the beef. Add ½ tsp black pepper and the Parmesan. Stir until combined.

    Simmer

    Reduce the heat to low or medium low and gently simmer for 3 to 5 minutes, stirring occasionally.

    Make It Silky

    Stir in ¼ cup reserved pasta water. Add more a little at a time as needed until the sauce is smooth and loose enough to coat the linguine.

    Add the Linguine

    Add the drained linguine directly to the skillet and toss over low heat for 1 to 2 minutes until evenly coated.

    Adjust

    Add small splashes of pasta water as needed. Taste and adjust with more black pepper, Parmesan, butter, red pepper flakes, or a small squeeze of lemon if needed.

    Finish

    Turn off the heat. Top with extra Parmesan and freshly cracked black pepper and serve immediately.

Trust Me on This: Let the beef brown before breaking it apart for deeper flavor. Pair with garlic bread and an arugula salad for the perfect dinner.
