Hi, I’m Mia Oku!

Mia’s Flavor File began as a way for me to collect the meals my husband and I love, so I could easily return to them whenever I needed inspiration or forgot what I did the first time. Let’s be honest, sometimes a meal comes out amazing, and then you can’t remember a single thing you added!
Now, I’m excited to share those recipes and ideas with you. Whether you are brand new to cooking and need beginner-friendly guidance, or you are an experienced cook looking for fresh inspiration, welcome to my page.

What you need
- ROASTED RED PEPPER CREAM
- 3 tbsp dairy free cream cheese, softened
- 1 tbsp plain Greek yogurt
- 1½ tbsp roasted red peppers, patted very dry and finely diced
- 2 tsp grated Parmesan
- ¼ tsp garlic powder
- ⅛ tsp black pepper
- SHRIMP
- 15 medium shrimp, peeled and deveined
- 1 tsp olive oil
- ½ tsp Adobo
- ½ tsp garlic powder
- ½ tsp smoked paprika
- ¼ tsp onion powder
- ¼ tsp black pepper
- ⅛ tsp cayenne
- ½ tsp bottled lime juice
- PROSCIUTTO
- 3 slices prosciutto
- CROSTINI
- 3 slices Ezekiel bread
- 1 tsp olive oil
- ¼ tsp garlic powder
- Small pinch black pepper
- TOPPINGS
- 2 to 3 spinach leaves, thinly sliced
- 1 to 2 tsp balsamic glaze
Cooking timeline
- 0:00Make the Roasted Red Pepper Cream
Pat the roasted peppers very dry and finely dice them into approximately ⅛ inch pieces. Mix the dairy free cream cheese, Greek yogurt, roasted peppers, Parmesan, garlic powder, and black pepper until creamy. Refrigerate while preparing everything else.
- 0:05Crisp the Prosciutto
Air fry the 3 slices of prosciutto at 380°F for 3 to 4 minutes. Let cool completely, then break into small pieces.
- 0:09Season the Shrimp
If using frozen shrimp, thaw them in cold water for 10 to 15 minutes, drain, and pat very dry. Season the shrimp with Adobo, garlic powder, smoked paprika, onion powder, black pepper, and cayenne.
- 0:12Cook the Shrimp
Heat a skillet over medium high heat for 1 to 2 minutes. Add 1 tsp olive oil, then arrange the shrimp in a single layer. Cook for 1½ to 2 minutes on the first side. Flip and cook for another 1 to 1½ minutes, or just until opaque and cooked through. Turn off the heat and toss with ½ tsp lime juice. Transfer immediately to a plate.
- 0:17Chop the Shrimp
Let the shrimp rest for 1 to 2 minutes. Cut the shrimp into small bite sized pieces.
- 0:19Make the Crostini
Cut the 3 slices of Ezekiel bread diagonally in half to make 6 triangles. Lightly brush with 1 tsp olive oil total. Season with ¼ tsp garlic powder and a small pinch of black pepper. Air fry at 380°F for 4 to 6 minutes, flipping halfway, until crisp and lightly golden.
- 0:25Assemble
Spread approximately 2 tsp roasted red pepper cream over each crispy triangle. Top each with an even amount of the chopped shrimp. Add the crumbled crispy prosciutto. Scatter a small amount of thinly sliced spinach over each crostini. Finish with a very thin drizzle of balsamic glaze.
- 0:30Serve
Serve immediately so the crostini stays crisp.
Trust Me on This: Pat the roasted peppers and shrimp very dry before using them. Too much moisture can make the cream loose and the crostini soggy.
