Behind Flavor File

Hi, I’m Mia Oku!

Mia Oku, creator of Mia’s Flavor File

Mia’s Flavor File began as a way for me to collect the meals my husband and I love, so I could easily return to them whenever I needed inspiration or forgot what I did the first time. Let’s be honest, sometimes a meal comes out amazing, and then you can’t remember a single thing you added!

Now, I’m excited to share those recipes and ideas with you. Whether you are brand new to cooking and need beginner-friendly guidance, or you are an experienced cook looking for fresh inspiration, welcome to my page.

Mia’s Flavor File will continue to grow as my husband and I try new meals, discover new flavors, and create memories in our home. Have an idea, a suggestion, or simply want to chat? Feel free to send me a message.

I’m so excited for the food journey we’ll be taking together. And remember, the secret ingredients are always love and Adobo 😉

What you need

  • 1 lb large shrimp, frozen or thawed, peeled and deveined
  • ½ tsp salt and ¼ tsp black pepper
  • ½ tsp smoked paprika
  • ¼ tsp cayenne, optional
  • ⅓ cup olive oil
  • 2 tbsp butter
  • 6–8 garlic cloves, thinly sliced
  • ½ tsp red pepper flakes
  • ¼ cup Kendall-Jackson Chardonnay
  • 2–3 tbsp heavy cream
  • Juice of ½ lemon
  • 1 tbsp chopped parsley, optional

Cooking timeline

  1. 0:00
    Thaw the shrimp

Place frozen shrimp in a bowl of cold water for 10–15 minutes, changing the water once if needed. Drain, peel and devein if necessary, then pat the shrimp dry.

  2. 0:15
    Season the shrimp

Season the thawed shrimp with salt, black pepper, smoked paprika, and optional cayenne.

  3. 0:04
    Build the garlic oil

Heat the olive oil and butter over medium heat. Add the sliced garlic and red pepper flakes and cook for 30–45 seconds, without letting the garlic burn.

  4. 0:06
    Add the wine + cream

Pour in the Chardonnay and simmer for 2 minutes. Lower the heat and stir in the heavy cream.

  5. 0:09
    Cook the shrimp

Add the shrimp and cook for about 2 minutes per side, until just pink and opaque.

  6. 0:29
    Finish + serve

Add the lemon juice and optional parsley, then serve immediately.

Trust Me on This: Keep the garlic pale and fragrant, not brown. Shrimp cooks quickly, so pull it as soon as it turns pink and opaque.
