Mia Oku, creator of Mia’s Flavor File

Mia’s Flavor File began as a way for me to collect the meals my husband and I love, so I could easily return to them whenever I needed inspiration or forgot what I did the first time. Let’s be honest, sometimes a meal comes out amazing, and then you can’t remember a single thing you added!

Now, I’m excited to share those recipes and ideas with you. Whether you are brand new to cooking and need beginner-friendly guidance, or you are an experienced cook looking for fresh inspiration, welcome to my page.

What you need

  • CHICKEN
  • 8 chicken drumsticks
  • 2 tbsp olive oil or avocado oil
  • 1½ tsp garlic paste
  • 1 packet Goya Sazón with Coriander & Annatto
  • 2 tsp Goya Adobo
  • 2 tsp smoked paprika
  • 1½ tsp onion powder
  • 1 tsp Italian seasoning
  • 1 tsp black pepper
  • ½ tsp ground cumin
  • SMOKY CHIPOTLE GLAZE
  • 2 tbsp maple syrup or light agave
  • 2 tsp Chipotle Tabasco
  • 1 tsp garlic paste
  • 1 tsp lime juice or apple cider vinegar
  • Pinch of black pepper
  • Tiny pinch of Goya Adobo (optional)

Cooking timeline

    Preheat

    Preheat the oven to 425°F.

    Prep

    Pat the drumsticks thoroughly dry with paper towels. Coat them with the oil, then rub the garlic paste evenly over the chicken.

    Season

    Combine the Sazón, Adobo, smoked paprika, onion powder, Italian seasoning, black pepper, and cumin. Season the drumsticks thoroughly, making sure every piece is evenly coated.

    Rest

    Let the seasoned chicken rest for 15 minutes.

    Bake

    Arrange the drumsticks in a baking dish or on a lined baking sheet, leaving space between each piece. Bake for 25 minutes.

    Mix

    While the chicken cooks, whisk together the maple syrup or agave, Chipotle Tabasco, garlic paste, lime juice or apple cider vinegar, black pepper, and optional Adobo. The glaze will taste strongly sweet and spicy on its own, but the flavors will balance once it caramelizes on the chicken.

    Flip

    Flip the drumsticks and bake for another 20 minutes.

    Glaze

    Position the drumsticks with the best skin side facing upward. Brush them generously with the chipotle glaze and bake for 5 minutes.

    Glaze Again

    Brush the drumsticks with a second coat of glaze and bake for another 5 minutes.

    Broil

    Broil the drumsticks for 1–2 minutes for a deeper caramelized finish. Watch them carefully to prevent the glaze from burning.

    Check

    Make sure the chicken has reached at least 165°F internally at the thickest part without touching the bone.

    Rest

    Let the drumsticks rest for 5 minutes before serving.

Trust Me on This: Pat the drumsticks very dry before seasoning and wait until the final 10 minutes to add the glaze. This helps the chicken brown while preventing the sweet glaze from burning.
