Hi, I’m Mia Oku!

Mia’s Flavor File began as a way for me to collect the meals my husband and I love, so I could easily return to them whenever I needed inspiration or forgot what I did the first time. Let’s be honest, sometimes a meal comes out amazing, and then you can’t remember a single thing you added!
Now, I’m excited to share those recipes and ideas with you. Whether you are brand new to cooking and need beginner-friendly guidance, or you are an experienced cook looking for fresh inspiration, welcome to my page.

What you need
- SPICY SAUSAGE
- 6 spicy sausage links, sliced into coins
- 1 tsp olive oil, if needed
- 1 packet Sazón
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 tsp smoked paprika
- 1/4 tsp black pepper
- 1/4 tsp ground ginger
- 1/4 tsp Adobo
- 1 tbsp light agave
- 1 tsp lime juice
- AIR FRIED BROCCOLI
- Broccoli florets
- 1 tbsp olive oil
- 1/4 tsp salt
- 1/4 tsp black pepper
- SOY MAPLE SESAME GLAZE
- 1 tbsp soy sauce
- 1 tbsp maple syrup
- 1/2 tsp sesame oil
- 1/8 tsp red pepper flakes
- CORN CAULIFLOWER RICE
- 1 12 oz bag frozen cauliflower rice
- 1/2 of a 12 oz can corn, drained well
- 1 tbsp olive oil
- 1 tsp minced garlic
- 1/2 tsp Adobo, plus more to taste
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/4 tsp smoked paprika
- 1/4 tsp cumin
- 1/4 tsp black pepper
- 1/4 tsp salt, plus more to taste
- 2 tsp soy sauce, plus more to taste
- 1 tsp sesame oil
- GOCHUJANG SPICY MAYO
- 2 tbsp light mayonnaise
- 3/4 tsp gochujang paste
- Small splash water, as needed
- EGGS
- 2 eggs
- Cooking spray or a little oil
- Salt, to taste
- Black pepper, to taste
Cooking timeline
- 0:00Preheat
Preheat the air fryer to 400°F.
- 0:00Season the broccoli
Toss the broccoli with olive oil, salt, and black pepper.
- 0:03Air fry
Add the broccoli to the preheated air fryer and cook at 400°F for 14 to 17 minutes.
- 0:03Brown the sausage
Heat a large skillet over medium heat. Add olive oil if needed, then add the sliced sausage in a single layer. Let it brown undisturbed for about 3 minutes.
- 0:06Season the sausage
Flip the sausage and add the Sazón, garlic powder, onion powder, smoked paprika, black pepper, ground ginger, and Adobo directly to the pan. Toss and continue cooking until browned and cooked through.
- 0:08Shake the broccoli
Shake the air fryer basket really well and continue cooking until the broccoli has browned, crispy edges.
- 0:10Finish the sausage
Reduce the heat and drizzle the agave over the sausage. Toss until lightly glossy. Turn off the heat, add the lime juice, toss again, and transfer the sausage to a plate.
- 0:11Wipe the pan
Carefully wipe out the sausage skillet and return it to the stove.
- 0:12Start the cauliflower rice
Add the frozen cauliflower rice to the same skillet over medium high heat. Cook for 5 to 7 minutes, stirring occasionally, until most of the excess moisture cooks away.
- 0:15Make the broccoli glaze
Mix the soy sauce, maple syrup, sesame oil, and red pepper flakes in a small bowl.
- 0:17Sauce the broccoli
Remove the broccoli from the air fryer and immediately toss the hot broccoli with the Soy Maple Sesame Glaze.
- 0:18Add the corn
Add the drained corn to the cauliflower rice and cook for 3 to 4 minutes.
- 0:21Season the cauliflower rice
Add the olive oil and minced garlic. Season with 1/2 tsp Adobo, garlic powder, onion powder, smoked paprika, cumin, black pepper, salt, and soy sauce. Cook for another 2 to 3 minutes.
- 0:24Taste and adjust
Taste the cauliflower rice and add more Adobo, salt, or soy sauce as needed. Once well seasoned, turn off the heat and stir in the sesame oil.
- 0:25Make the gochujang spicy mayo
Mix the light mayonnaise and gochujang until smooth. Add a small splash of water until thin enough to drizzle.
- 0:26Fry the eggs
Fry the eggs until the whites are fully set but the yolks are still runny. Season with salt and black pepper.
- 0:29Build the bowls
Divide the corn cauliflower rice between two bowls. Add the spicy sausage, Soy Maple Sesame Broccoli, and a runny fried egg to each.
- 0:30Finish
Drizzle the Gochujang Spicy Mayo over the entire bowl and serve immediately.
Trust Me on This: Keep that yolk runny. Break it right over the bowl so it mixes with the creamy gochujang drizzle and coats the cauliflower rice.
