Mia Oku, creator of Mia’s Flavor File

Mia’s Flavor File began as a way for me to collect the meals my husband and I love, so I could easily return to them whenever I needed inspiration or forgot what I did the first time. Let’s be honest, sometimes a meal comes out amazing, and then you can’t remember a single thing you added!

Now, I’m excited to share those recipes and ideas with you. Whether you are brand new to cooking and need beginner-friendly guidance, or you are an experienced cook looking for fresh inspiration, welcome to my page.

What you need

  • 5 chicken drumsticks
  • 1½ tbsp Walkerswood Traditional Jamaican Jerk Seasoning, Mild
  • 1 tbsp olive oil
  • 1 tbsp maple syrup
  • ½ tsp ground cinnamon
  • ½ tsp Goya Adobo
  • ½ tsp turmeric
  • ½ tsp paprika
  • ½ packet Goya Sazón with Coriander and Annatto
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ¼ tsp black pepper
  • Squeeze of lime

Cooking timeline

    Season

    Coat the chicken with Walkerswood jerk seasoning, olive oil, maple syrup, cinnamon, Adobo, turmeric, paprika, Sazón, garlic powder, onion powder, black pepper, and lime. Marinate at least 30 minutes, or refrigerate up to overnight.

    Roast covered

    Bake at 425°F for 30 minutes in a lightly covered baking dish.

    Finish uncovered

    Uncover, brush with the pan juices, then roast for 15–20 minutes more. Do not add extra maple syrup.

    Check + rest

    Chicken should reach 165°F at the thickest part. Rest 5 minutes before serving.

Trust Me on This: Careful: Walkerswood Mild is still spicy. We like spicy, but start with the listed amount. For deeper color, broil for 1–2 minutes at the end and watch closely.
