Behind Flavor File
Hi, I’m Mia Oku!

Mia’s Flavor File began as a way for me to collect the meals my husband and I love, so I could easily return to them whenever I needed inspiration or forgot what I did the first time. Let’s be honest, sometimes a meal comes out amazing, and then you can’t remember a single thing you added!
Now, I’m excited to share those recipes and ideas with you. Whether you are brand new to cooking and need beginner-friendly guidance, or you are an experienced cook looking for fresh inspiration, welcome to my page.
Mia’s Flavor File will continue to grow as my husband and I try new meals, discover new flavors, and create memories in our home. Have an idea, a suggestion, or simply want to chat? Feel free to send me a message.
I’m so excited for the food journey we’ll be taking together. And remember, the secret ingredients are always love and Adobo 😉

- ½ tsp black pepper

- CREAMY SAUCE
- 4 tbsp dairy free cream cheese
- ¼ cup reserved pasta water or regular hot water
- ½ tsp garlic powder
- ¼ tsp smoked paprika
- Black pepper, to taste
Cooking timeline
- 0:00Cook the Pasta
Bring a large pot of water to a boil. Add the Banza chickpea shells and cook according to the package directions, checking about 1 minute early to prevent overcooking. Reserve ½ cup pasta water if possible, then drain.
- 0:05Brown and Season the Wagyu
Heat a large skillet over medium heat. Add the ground Wagyu and break it into small pieces. Add the Adobo, Perfect Seasoning, crushed beef bouillon, garlic powder, onion powder, smoked paprika, black pepper, cayenne, and Italian seasoning. Cook for 6 to 8 minutes, until fully browned. Drain excess fat, leaving approximately 1 tbsp in the skillet.
- 0:13Add the First Spinach
Add 1½ packed cups fresh spinach to the seasoned beef. Stir over medium low heat for 1 to 2 minutes until wilted.
- 0:15Make the Sauce
Reduce the heat to low. Add the dairy free cream cheese, ¼ cup pasta water or hot water, garlic powder, and smoked paprika. Stir until the cream cheese melts and forms a creamy sauce around the beef.
- 0:18Add the Pasta
Add the cooked chickpea shells to the skillet. Gently fold everything together for 1 to 2 minutes until evenly coated.
- 0:20Add More Spinach
Add another 1½ to 2 packed cups fresh spinach. If needed, add 1 tbsp water, increase the heat to medium low, and cover for 1 to 2 minutes to help the spinach wilt. Uncover and gently stir until evenly distributed.
- 0:24Rest
Turn off the heat and let the pasta rest for about 2 minutes so the sauce thickens and clings to the shells.
- 0:26Taste and Serve
Taste and adjust the seasoning only if needed. The Adobo, Perfect Seasoning, and beef bouillon already add plenty of savory flavor and salt.
Trust Me on This: Add the spinach in batches because it shrinks quickly, and avoid overcooking the chickpea pasta once everything is combined.
